COMPOSITION
Wagyu means Wa = Japan Gyu = Beef, it is a name that includes several breeds of ancient native breeds. Most Wagyu are black, commonly called Koroge Washu and akage washu for their red coat and nihon tankaku washu for their short horns.
The main ones are black Japanese, brown Japanese, polled Japanese, shorthorn Japanese.
Here we are on a selection of small family-run farms scattered throughout Spain.
The selection is based on the selection criteria of the Japan Meat Gradind Association.
